Cattle Corner: Mountain Oysters recipe

This recipe for calf fries or "Mountain Oysters" is from 2012 CowBelle of the Year Cathy Tobin.

Ingredients

1 dozen calf fries

1 cup Canola Oil

4 tbsp. butter

1 clove of garlic crushed

1⁄2 cup flour

1⁄2 cup seasoned bread crumbs

2 eggs beaten with 1 tbsp worcestershire sauce

Steps

Take the calf fries in their casing and boil in salted boiling water for 10 minutes, drain and let cool. When cool enough to touch, peel casing from the sweetbreads. Depending on the size you may slice in half or leave in one piece. Dip them in flour, egg batter and then in seasoned bread crumbs and saute in canola oil, butter and garlic for two to three minutes until golden brown. Serve with toothpicks and enjoy!
